TURKISH STYLE COUSCOUS SALAD

INGREDIANTS

  • 1 couscous
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika(optional)
  • Sea salt and ground black pepper
  • 1 medium onion, peeled
  • 2 ripe tomatoes
  • 1 fresh red chilli
  • 1 bunch of fresh mint, leaves picked
  • I bunch of fresh parsley
  • 1 teaspoon of tomato puree
  • 2 tablespoon of vegetable oil
  • Juice from 1 lemon

PROCESS

Place the couscous, cumin, paprika (if using) and a big pinch of salt into a bowl. Stir to combine, then pour over just enough boiling water to cover the couscous cover the bowl and leaves for about 10 minutes

Meanwhile, finely chop the onion, cucumber, tomatoes and chilli. Finely chop the mint and coriander leaves, and the parsley (including the stalks).

Turn the couscous with a fork, and then stir in the tomato puree until well coaled. Add all the chopped vegetables, chilli and herbs and mix well. Stir in the oil and the lemon juice, then season it how you like it. Serve as a side salad with a grilled chicken or fish.

 

YOU CAN ALSO EAT IT ON IT’S OWM IF YOU WANT A LIGHT MEAL, YOU CAN HAVE IT WITH CHICKEN PEPPER SOUP….hmmm delicious
